A Chef’s Journey – a new book launched in support of Hospitality Action
“A Capon is?” tells the light-hearted story of a young chef’s early career, through Westminster College and leading London Hotels and restaurants in the mid-1960’s to the mid-1970’s. The 1960s and 70s were an unique period of time which did see many great chefs emerge. This is a story which has been waiting to be told and is a “must read” for all who really want to learn about that period and what does make the industry so special.
The author is John Roberts, who worked in many leading hotels and restaurants, worked in three colleges of further Education as a chef lecturer and designed and operated the award-winning Butlers Wharf Chef and Restaurant School in London.
In addition to the above John became Dean of the School of Hospitality and Tourism and moved into Heritage and hospitality consultancy in the UK and overseas. He is Fellow and mentor of the Institute of Hospitality, Ambassador and Future Chef for Springboard UK.
John’s inspiration for the book came from reflecting how much the industry had provided him with in terms of the opportunity to travel, to meet and work with many fantastic industry individuals and businesses. These have included famous chefs, hoteliers, restauranteurs, to being involved in training others and seeing them develop and succeed, as well as the pleasure in judging regional and national competitions and awards, something he is still involved in.
John also wanted to recognise individuals and organisations that do so much for the Hospitality Industry and within the book praises and acknowledges the work they do alongside college lecturers and chefs within the industry.
John hopes that this book can firstly support Hospitality Action’s great work but he also hopes that people within the industry really enjoy reading it and are encouraged to work with the great organisations which do so much to support the industry.
