In light of my January Non diet, diet ramblings, and the odd slaying of bread, I feel further explanation may be necessary. I’m not against bread as such, more the plastic wrapped, additive laden variety.A traditional loaf of bread takes two days to mix, knead, prove and bake; Mother’s Pride takes less than an hour. Including slicing, bagging and merchandising. That level of efficiency can’t come without compromise, and a science lab helping hand for smug old mum.Cue: my EP article on the joys of Gail’s Artisan Bakery. Plus a super quick spelt soda bread recipe and an off the shelf rye. With a splash of tropical Indian heat thrown in: Kerala, where I escape to when the sunshine gods refuse to visit our shores.Next month I’ll blog my travel tips and wholesomely seductive, South Indian recipes.Clare

Fort Cochin: Chic, tropical India & chai

Unable to withstand yet another day of bone chilling, sludgy (Spring!) London snow, I’ve fled to my Indian home: Fort Cochin in Kerala. Via a quick eating fest in Bombay. Here’s a snapshot to tide you over until full disclosure when I’m back on UK soil.

From the streets: Village Bakery 100% rye bread

Or more specifically, from Waitrose. In light of my recent The best thing since sliced bread article and Spelt & tahini soda bread recipe, here’s a good value, off the shelf option which is hard to beat.

For me, Soda bread’s a true winner: Yeast and hassle free (no sweat provoking kneading required), you can have a batch in the oven within 10 minutes. Genuinely. It’s so quick in fact, I’ve adjusted, binned and tweaked this ambitious (for someone who doesn’t make bread) combo countless times. I’m now ready to disclose.

The best thing since sliced bread, my EP article

To say Gail’s Artisan Bakery owners, Ran Avidan and Tom Molnar are passionate about bread would be an understatement. On moving to the UK, they struggled to find the ‘daily bread’ of France or Europe, instead being faced with a chemical laden, plastic wrapped alternative that, according to Ran, “It’s only by coincidence both are called bread”. So, instead of dropping their suggestions into Greggs, they left their McKinsey & Co jobs in favour of creating a local community bakery that would bring back the age-old art of bread to Londoners.
